Kicked off this leap day with a good ole cancer-fi Kicked off this leap day with a good ole cancer-fighting smoothie bowl 😋. It sure ain’t pretty, but it has some serious cancer-butt-kicking goods inside. It wasn’t sweet like my usual smoothies (I usually throw a frozen banana in them), but it felt so good to sit and FEEL how nourishing this was to my body. I encourage all of you to incorporate more of these ingredients in your diets!

CANCER-FIGHTING SMOOTHIE ✨
1/2 cup ice
1 cup organic frozen mixed berries
1 tsp turmeric
small piece of fresh ginger root
juice from one lemon
handful of organic spinach
1/2 tsp @sunpotion reishi
1/4 water just to blend (or more if your blender needs it)

Throw everything into a @vitamix or high powered blender and blend on medium high for a couple minutes. I topped mine with organic strawberries and a few @metaballenergybites just for fun.

Organic mixed berries are loaded with antioxidants like anthocyanins, ellagic acid, and resveratrol. These plant compounds reduce disease risk and protect your cells.

Turmeric is my all time favorite spice. Ever. I’ve grown to absolutely love the flavor but aside from that it’s one pretty amazing God-given spice. It contains curcumin that has powerful anti-inflammatory effects and is a super strong antioxidant. It’s been used in India for thousands of years and is known for its amazing medicinal properties.

Reishi mushroom is another staple in our household. Research in cancer patients found that some of the molecules found in this mushroom can increase the activity of our natural killer cells (a type of white blood cell) that are responsible for fighting off cancer an infections in the body.

These have a slightly different texture compared to my other blueberry muffins because I used a combination of spelt flour and banana instead of almond flour. I hope y’all give this recipe a try because they really are YUMMY YUMMY

#recipe for the muffins
2 cups @bobsredmill spelt flour
3 very ripe bananas, mashed
3 scoops @ancientnutrition unflavored multi collagen protein
1/3 cup coconut oil, melted and slightly cooled
1/2 cup @oatly oat milk
2 pasture-raised eggs
1 tsp vanilla extract
1 cup organic blueberries
Pinch of pink salt
1/3 cup pure maple syrup

For the drizzle
1/2 cup organic powdered sugar
2 tsp lemon juice
2 tsp pure maple syrup
Dash is vanilla extract

Preheat oven to 350 and spray muffin tin with @chosenfoods avo oil. In a large bowl mash bananas and add in eggs, maple syrup, vanilla, oat milk, and coconut oil and mix with a hand mixer. Add spelt flour, collagen, salt, and mix until fully combined. Fold in blueberries and bake for 20-25 minutes.

In a small bowl combine powdered sugar, lemon juice, vanilla, and maple syrup and stir with a fork. Drizzle on muffins once they are fully cooled. HAPPY FRIDAY YA’LL! ☀️ #paigeshappyplate #justaddcollagen #ancientnutrition
Bub and I shared this bowl of oats this morning (u Bub and I shared this bowl of oats this morning (unintentionally because he already had breakfast 😏) and they did not disappoint either of us 😋. Oatmeal + chocolate 🍫 will never get old for me.

Here’s #whatsinmybowl 
sprouted @onedegreeorganics oatmeal cooked on the stove with @oatly oak milk. Added a little raw honey, Ceylon cinnamon, and @sunpotion lion’s mane. Lion’s mane is a medicinal mushroom that’s long been used in Chinese medicine. It’s great for mental clarity + focus and may even help protect against dementia. Plus it contains beta-glucan which helps protect against cancer💥 
I topped this bowl off with some organic straw b’s, @onedegreeorganics hemp granola, and @blissfullybetter chocolate. #paigeshappyplate
Yesterday the entire house was filled with heart-s Yesterday the entire house was filled with heart-shaped balloons and handmade decorations that Greta spent days making. Even bub and daddy helped her decorate aka produce the greatest mess ever seen, and yet I wouldn’t have traded it for anything.  I love love love my forever valentines.

I didn’t come close to their gesture, but I did manage to whip up these chocolate covered strawberries for them and they all seemed to be super duper thrilled. Plus they were fun to make!

Ya need:
2 containers of organic @driscollsberry strawberries
1/2 bag of @enjoylifefoods chocolate morsels (I used the other half on those yummy pb cookies)
2 Tbsp @nutiva coconut oil
A handful of @lovegrown strawberry o’s cereal 
A handful of toasted coconut flakes

Rinse and pat dry strawberries. Melt chocolate in a small saucepan on low heat and stir in coconut oil (the coconut oil just thins it out a little). In a coffee grinder add in strawberry cereal and pulse until small flakes are formed. Dip strawberries in chocolate and immediately top with either coconut flakes or strawberry cereal “sprinkles”, or just leave them plain. Lay them on a piece of parchment paper and stick in the fridge! #paigeshappyplate
Nothing BUTTER than these CHEWY PEANUT BUTTER COOK Nothing BUTTER than these CHEWY PEANUT BUTTER COOKIES 🥜 I’m a sucker for anything containing peanut butter especially when chocolate is in there too. 🥜 + 🍫 = 💕🤩🤤 it’s a match made in heaven kinda thing. Ya know. Totally Valentine’s Day appropriate.

Cookies:
2 cups @bobsredmill spelt flour
1/3 cup @fourthandheart ghee, melted
1 tsp vanilla extract
1 cup @wholefoods brand creamy peanut butter
1 tsp @bobsredmill baking soda
1/2 cup pure maple syrup
1/4 cup coconut sugar

Chocolate drizzle:
1/2 bag @enjoylifefoods chocolate morsels
2 TBSP @nutiva coconut oil
Pinch of sea salt

In large bowl combine flour, baking soda, and coconut sugar. Add in melted ghee, vanilla, peanut butter, and syrup and mix together. Line a pan with parchment paper and form small balls of dough using your hands or a scoop. Mash with a fork and bake at 350 for 15 minutes.

For chocolate drizzle, add morsels and coconut oil to a small saucepan and heat on low until chocolate is fully melted. Stir often to prevent burning. Once cookies are cooled, drizzle chocolate and sprinkle a little sea salt on each one 💕🤩🥰 #paigeshappyplate
Spare grapefruits lying around? Juice them and the Spare grapefruits lying around? Juice them and then make this GRAPEFRUIT PITAYA SMOOTHIE 🌺💫 it’s loaded with vitamin C, carotenoids (plant pigments that give dragon fruit it’s pretty color and help combat disease), and lots of fiber.

Here’s the #dEATS
3/4 cup freshly squeezed grapefruit juice
1 frozen banana
1 thawed packet of @pitayaplus dragonfruit
2oz coconut purée
1 scoop @ancientnutrition vanilla bone broth protein
1/2 jar @culinayogurt strawberry + rose coconut yogurt
Handful of organic frozen spinach (I just buy a small bag and throw it in the freezer) **I use it often so it never goes bad** Add all of this to a @vitamix and blend on medium high until a smooth consistency is reached. I hope y’all have a GRAPE Tuesday! ⭐️ #paigeshappyplate
Leftovers aren’t boring when there are tacos inv Leftovers aren’t boring when there are tacos involved 🌮😋. If you watched my stories yesterday then you know we had tacos last night, so today I decided to deconstruct one and make my own taco salad. TACO-BOUT SOME GOOD STUFF

What exactly is #onmyplate you ask? Lots of @organicgirl spring mix topped with leftover taco meat seasoned with @frontiercoop Mexican Fiesta seasoning. @wholefoods Mexican blend cheese, organic cherry tomatoes, cucumber, jalapeños, and a @sietefoods grain free, hard taco shell. I drizzled some chipotle ranch on top from @cindyskitchen and devoured this in record time 🤪🤓 #paigeshappyplate
Currently dreaming of this charcuterie board I mad Currently dreaming of this charcuterie board I made for Christmas Eve while reminiscing over this past decade. It’s bizarre to think that in these last 10 years I:

graduated high school, finished nursing school, got married, had two kids, was diagnosed with cancer, beat cancer 👊🏼, traveled, and most importantly learned countless life lessons.

I’m ready to embrace 2020 with complete gratitude and open arms. My only intentions are to be more present and focus on continued good health. Nutrition school has been kicking my butt and taking up so much of my time, but I promise to make more of an effort to post more. I’ve got new and [hopefully] helpful content planned to share, and I’m wishing y’all a happy and healthy year ahead 💫 #paigeshappyplate
