We’re at the beach this week so I haven’t been We’re at the beach this week so I haven’t been posting a ton. Just enjoying time with my family and soaking up all the sunshine ☀️ I possibly can.

Taking time to disconnect is something I strongly believe in (which is why I’ll take a long instagram hiatus from time to time) and making an effort to be present in the moment with my peeps is crucial to my mental health.

WAYS TO BE PRESENT IN THE MOMENT
.
. ☼ reduce distractions by putting the phone away
☼ start the day off with meditation and mindful prayer
☼ deep breathing
☼ invite more presence into conversations by listening more than you speak
☼ journal or make lists of things you are grateful for

Practicing these steps really make mindfulness easier for me, and I hope they also help you cultivate more presence and awareness in your daily lives ✨ #paigeshappyplate

It’s filling, creamy, and tastes like something you’d order at a poolside bar (minus the alcohol of course). 🤪 Speaking of, who else is in major need of some long beach days?! 🙋🏻‍♀️☀️🏖 PIÑA COLADA SMOOTHIE 🍹

1 frozen banana
1/2 cup organic, frozen pineapple chunks
@innereco coconut meat
1 scoop @ancientnutrition vanilla bone broth protein
1/2 tsp @navitasorganics maca root, optional
1/2 cup ice
Filtered water

Add to a @nutribullet and blend. Serve in your favorite cocktail glass, add toasted, unsweetened coconut flakes on top, and pretend you’re in a tropical paradise somewhere🍹🌴🐠 #paigeshappyplate
Y’all already know smoothie bowls are my love la Y’all already know smoothie bowls are my love language, and I never seem to tire of them. If you love smoothies but don’t like to eat the same one everyday, try switching it up and combining different ingredients into your blender- it’s actually harder to mess up than you may think 💭. Sometimes the weirdest combos end up making the tastiest smoothies!

BERRY COCONUT SMOOTHIE 🥥

1 cup frozen, organic mixed berries
1 frozen banana
@innereco coconut meat
1/2 jar @culinayogurt strawberry rose coconut yogurt
1 scoop @ancientnutrition vanilla bone broth protein
1 scoop @amazinggrass greens powder
1/2 cup ice
Filtered water

Blend together in a @vitamix or other high-powered blender and top with sprouted pumpkin seeds, pecans, ground flaxseed, and fresh blueberries ☀️ #paigeshappyplate
If you’re like me and always have leftover torti If you’re like me and always have leftover tortillas after a good olé taco Tuesday 🌮, put them to good use and make these yummy chicken enchiladas.

These are super easy to make and are gluten free + dairy free. I tend to keep @sietefoods cashew queso and enchilada sauce in my fridge at all times just because it’s so delicious and versatile. I used my Instant Pot to cook the chicken, but you can easily cook it in a skillet and shred after with a fork.

GLUTEN-FREE CHICKEN ENCHILADAS 🌶

1 pound shredded organic, pasture raised chicken
1 garlic clove, minced
1/4 yellow onion, finely chopped
@frontiercoop Mexican fiesta seasoning
7-8 @mariaandricardos quinoa flour tortillas
1 jar of @sietefoods red enchilada sauce
1 jar of @sietefoods cashew queso (blanco)

Preheat oven to 350 degrees F. Cook chicken with onion, garlic, and Mexican seasoning in Instant Pot or skillet and shred using a fork. Cover bottom of casserole dish with enchilada sauce. Fill each tortilla with chicken mixture and 1 TBSP of cashew queso. Roll up and carefully flip the roll over so the seam is down. Drizzle enchilada sauce and queso on top and bake for 15 minutes. Garnish with fresh cilantro. Use leftover cashew queso for chips + dip which pairs so nicely with this dish ✨ #paigeshappyplate
For the past few weeks, John Blake’s grandpa has For the past few weeks, John Blake’s grandpa has been giving us a ton of homegrown, organic cucumbers 🥒 (along with an abundance of tomatoes & squash) so I’ve been snacking on them in between meals and adding them to my salads.

Cucumbers are so refreshing during this time of year because of their high water content. They are really high in vitamin K which is essential for bone health. They also contain dozens of antioxidants, and can protect against estrogen-dominant cancers because they contain lignans. Lignans are converted into compounds (in the digestive tract) that actually bind to estrogen receptors.

EVERYTHING BAGEL CUCUMBER SALAD 🥒

1 organic cucumber, sliced
1/4 purple onion, finely sliced
1 TBSP @monarifederzoni organic balsamic vinegar
1 tsp @chosenfoods avocado oil
1 tsp raw honey
1/2-1 tsp everything bagel seasoning
Dash of red pepper flakes

In a small bowl, combine balsamic vinegar, avo oil, & honey and whisk. In a separate bowl add cucumber and onion slices and pour liquid mixture over them. Toss gently to coat. Sprinkle everything bagel seasoning + chili flakes on top. Hope y’all enjoy this tasty summer snack! #paigeshappyplate

Those little hands can’t get enough either. The kids are always down for green smoothies for breakfast no matter how often I make them. This makes my life so much easier because I know they’re getting the good stuff in at *least* once a day. I love using frozen baby spinach in my green smoothies because of its mild taste and it’s a great way to boost your immune system and naturally energize you.

EASY GREEN SMOOTHIE 🥬

1 cup organic, frozen spinach
1 frozen banana
1/3 cup organic, frozen mango
1/4 cup frozen avocado chunks
1/2 tsp @sunpotion chlorella
1/2 tsp @sunpotion lions mane
1 tbsp @manitobaharvest hemp seeds
1 scoop @ancientnutrition vanilla bone broth protein
1/2 cup ice
Filtered water, just enough to blend easily but don’t add too much

Add to a high-powered blender (I use my @nutribullet for this one) and blend until smooth and creamy. The texture is perfect in my opinion, and I usually top mine and Oliver’s with homemade granola (Greta prefers hers without granola) and enjoy! 🌿😋 #paigeshappyplate

It’s crazy that I used to despise tea, and now my appreciation for it is like no other. God really does flourish the earth with an abundance of healing and medicinal compounds, and I just find that so dang sweet of Him.
